Once you have made all your olive oils, it is time to take the last few steps. The first thing is to taste them. See our How to Taste
page for advice from an expert in the field. You can then blend different oils to achieve the taste profile you want for each of your finished product. If you want your oils to be certified as extra virgin, you will first have to have them tested by a lab, and then sent to a certifying agency. Finally, of course, they have to be bottled and labeled.
