Long chain fatty acid


Long chain fatty acids have from 12 - 20 carbon atoms. The primary fatty acids in olive oil are all long chain fatty acids (oleic, linolenic and linoleic). Very long-chain fatty acids have greater than 20 carbon atoms. These tend to be more solid at room temperature, such as waxes. There are not appreciable amounts of these in olive oil.
