Olive's House (Oikos Elaias)

Olive’s House (Oikos Elaias) is a Traditional Olive Oil Extraction Facility located in Sparta. Founded in 1927, it has a long family history and today is one of the few traditional olive oil facilities in the prefecture of Laconia, Peloponnese. We produce only FIRST COLD PRESSED OLIVE OIL with cold water strictly under 19C (66F) by using stonemills, kneader and hydraulic press.

Sparta and especially the northen area is a geographical point with great tradition in olive oil extraction. For many specialists the quality of the olive oil produced in this area is one of the best in the world. Location’s altitude (380-430 m), weather conditions, water quality (straight from water sources of Taygetos mountain), ground structure & sun's orientation are the main factors contributing to a unique olive quality. Our facility produces a superior quality of extra virgin olive oil. To achieve such a unique result our experienced team knows exactly all the secrets of the production stages. Delivery and assessment of olives, way of storing and time between harvest and pressing, detailed washing of olives, time and speed of crushing in stonemills, malaxing with cold water, pressing under 300 atmospheres and double oil-water separation provide exceptional olive oil quality. The critical point: The paste is not heated because no water is used during stonemills crushing so a lower level of polyphenols is extracted. The oil is less bitter but with more flavors. Then a longer malaxing time (35-45 min) with cold water (strictly under 19ºC/66ºF) helps the oil pick up minor components of the olives that can improve flavor as well as keep together all nutritional facts (antioxidants, vitamins, anti-inflammatory & total phenols).
