COMPREHENSIVE OLIVE OIL TASTING COURSE COMES TO NEW YORK CITY
A week-long immersion in olive oil taste training and sensory development is coming to New York City March 10-14, 2014. Lead by Italy’s National Organization of Olive Oil Tasters (ONAOO), the world’s premier olive oil tasting school, attendees will emerge with the skills needed to taste and evaluate olive oil.
“Understanding how to taste for positive attributes and sensory defects is an essential ability for anyone that works with olive oil,” Nicholas Coleman, Chief Oleologist at Eataly in New York City and co-organizer of the course. “This includes producers, importers, retailers, sommeliers and culinary professionals.”
The course will be held at Del Posto in Manhattan. Mario Batali’s executive chefs will lead a series of culinary demonstrations to demystify olive, providing a rare glimpse of techniques used inside New York’s top restaurants. At the end of the course, ONAOO will offer a sensory certification so attendees can test their new skills.
In addition to palate training and culinary lessons, attendees will learn the olive oil production process from tree to table, marketing and labeling guidelines, and oil and food pairings.
