The olive groves are located in Basilicata in the municipality of Montalbano Jonico, in province of Matera, the area of the Metapontino, cradle of the ancient “Magna Grecia” (Megálē Hellás, "Greater Greece"). The hand-picked olives are immediately brought to the Nivuori Company mill to ensure the lowest possible oil acidity. The mill is a modern installation, a continuous cycle one.
