I participate in the COOC tasting panel and in the UC Davis tasting panel and have been a judge in different competitions. I regularly teach classes on sensory evaluation of olive oil.

I studied with Dr Marco Mugelli in San Casciano, Italy. I participate in the COOC tasting panel and in the UC Davis tasting panel and have been a judge in different competitions. I regularly teach classes on sensory evaluation of olive oil as well as cooking classes in different cooking schools and through the Slow Food chapters. My latest work has been with Pacific Sun olive oil.

A native from Buenos Aires, Argentina, I started working with olives and olive oil a decade ago, when Apollo Olive Oil was created. After doing a bit of everything at Apollo and after studied in Italy with Marco Mugelli, I specialized in tasting & blending.
