After working for 10 years with Apollo Olive Oil I have started my own consultant company, specialized in the area of tasting & blending and supervising quality during production. I participate in the COOC tasting panel and in the UC Davis tasting panel and have been a judge in different competitions.
I regularly teach classes on sensory evaluation of olive oil.

Paul Vossen has been a member of the academic faculty of the University of California as a Cooperative Extension Farm Advisor since 1980. He has direct experience growing many specialty crops and works internationally as a private consultant in the field of specialty crops production. He is an expert in olive oil processing and sensory analysis and is currently the panel leader of the UC Cooperative Extension Olive Oil Research Taste Panel.
