How do they get pimentos into green olives?
Most green olives with pimentos are made in Spain with high speed pitting and stuffing machines. The pimento (red peppers) are ground into a paste and mixed with gelatin and other stabilizers and extruded in long strings that are then fed into the stuffing machine. It is said that one machine can stuff as many olives in an hour as it used to take 20 workers all day by hand.
